Puerh tea represents a very different style of tea that is lesser known outside China, though has a growing following.
Puerh has two distinct categories, Sheng 生 & Shu 熟 (sometimes called Shou). Sheng Puerh translates as raw or green, whereas Shu/Shou translates as cooked or ripe. In China Shu Puerh is often grouped with other Hei Chas 黑茶, literally black tea otherwise known as dark tea. This can confuse western tea drinkers; what we consider a black tea is known in China as red tea instead.
Both Sheng and Shu Puerh teas involve fermentation. Sheng is the name for the traditional method which can be naturally aged. In the late 1960s and early 1970s the China Tea Corporation began production of Shu Puerh, a method which promotes fermentation in order to mature the tea more quickly.
